Anything wrapped in bacon usually tastes wonderful. This is no exception. This is a very easy appetizer especially if you love seafood. We made these for our Christmas gathering and there were no leftovers to be found!!
These can be done in the oven but they taste great when done on the grill.
- 1 lb scallops (cut in half)
- 1 lb bacon
Cut each scallop in half. I like to cut them in half when they are for an appetizer because it makes them bite size, and then you don't need a knife and fork to eat them.
Wrap each 1/2 of scallop with a strip of bacon and secure with a toothpick.
These taste best when grilled over a charcoal fire. Cook turning once until they loose their translucency and begin to look opaque. Scallops can over cook fairly quickly and once they do they are very tough. So be careful not to over cook them.
My dad did a wonderful job of cooking them to perfection on his grill...and they were pretty tasty!
