Bishop Chicken

This is one of those recipes that my mom always made for us growing up. It’s great around the holiday’s, especially on a cold day. It is quick and easy and full of delicious flavor. For the longest time we didn’t really have a name for it, we just referred to it as the chicken dish with stuffing, but I asked around and Bishop Chicken is what we came up with. So for all of you casserole fans here is a real winner.


  • 2-3 bonless skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 box of instant stuffing mix
  • 3 - 5 slices of american cheese


Preheat oven to 375°
In a casserole dish place the chicken breasts on the bottom. Add about 1 1/2 cup of milk to the cream of chicken soup and pour over the top of the chicken.

Place the slices of American cheese over the top of the chicken.

Empty the contents of the stuffing mix over the top of the chicken and cover with foil.

Bake in oven for 1 hour or until chicken is done.

Serve with rice or potatoes.
