I was in the mood for some fall food today so I tried my hand at making my own caramel corn. It was delicious and I would have eaten the whole bowl if it wasn’t for my guests that were coming over later on.
It was very easy to make and a great snack when guests come over. You can also make it before hand so there is less to do the last minute. But the best taste is when it is still hot from the oven, and the caramel is still nice and gooey! Enjoy!!
- 12-13 cups of popped pop corn (not microwave popcorn)
- 1 cup packed brown sugar
- 1/2 cup butter
- 1/4 cup light corn syrup
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 1/2 cups peanuts or other nuts (optional)
Heat oven to 200 °
Pop the popcorn and put in very large mixing bowl.
In a saucepan heat brown sugar, butter, corn syrup, and salt. Stir until bubbly and then let simmer for about 5 minutes without stirring.
Remove from the heat and stir in the baking soda. When you add the baking soda the sugar mixture will foam up - that is ok!
Pour half of the hot mixture over the popped pop corn and fold it together. Add the nuts and the remaining mixture and fold until coated evenly.
Spread out in a thin layer on baking sheets or a roaster pan. You may need to use two. Place in oven for 1 hour mixing very 15 minutes.
Cool on tin foil or parchment paper for 30 minutes or until completely cooled.
Store in air tight container...It will make quite a bit! (This would also make a great Christmas gift to for your church family or office!)
