These cookies are one of my grandmothers favorite recipes. She sent the recipe to me in the mail and told me to share them with friends. Indeed I have, they are simply wonderful. They are meant to me more of a crisp cookie so they are flat and thin. But oh so good!! Hope you all enjoy!!
Ingredients
- 3/4 cup flour
- 1 tsp baking soda
- 1/2 tsp salt (scant amount)
- 1/2 cup butter or shortening
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 tsp vanilla
- 1 egg
- 1 1/2 cups quick cooking oats
Directions
Preheat oven to 350°
Sift together the flour, salt and baking soda.
In a separate bowl cream together the shortening and both sugars until light. Works best with a hand mixer or kitchen aid mixer. Add the vanilla and egg and mix well.
Stir in the dry ingredients and mix well.
Drop by tablespoon full onto a baking sheet and place in preheated oven. Bake for 10 minutes or until the edges are slightly browned. Remove from oven and let sit for a few seconds before removing them from the baking pan. They will fall apart if they are removed to quickly.
Cool on a wire rack and enjoy!!

the cookies are delicious but….. the salt is a little to high for me i will try again and use unsalted butter and reduce the salt a little gatta go kids asking for more cookies.
