Toward the end of summer time it seems like there is an abundance of zucchini. Everyone’s garden is on overload with zucchini. What to do with all that zucchini?? Here is an easy side dish to use up some of that zucchini. Throw it on the grill while you cook your burgers or chicken…easy!!
- 1 Large zucchini or 2 small ones
- Salt and pepper
- 2-3 tbsp 21 seasoning salute from Trader Joes or a steak seasoning
- 3-4 tbsp olive oil
Generously season and rub with olive oil. Place on the grill medium-high. Turn frequently until soft and slightly brown and there are nice grill marks on each side.
