Whenever we would have a holiday gathering, Harvard Beets would be one of the many traditional dishes served. My grandmother always made them, and they were always the best. I have always been a big fan of beets. I can remember canning them with my mom when I was little, later on we painted with the juice of the beets too and if I remember correctly I was covered in beet juice by the end.
Not only can beets be very tasty, and a lot of fun for kids, but they are also a very healthy veggie. A compliment to many meals
Ingredients
- 1 can of beets
- 3/4 cup of sugar
- 1/4 cup of apple cider vinegar
- 3 tsp corn starch
Directions
Pour contents of beets into a small sauce pan and turn heat to med/high.
Add sugar, vinegar, and cornstarch. Stir until all ingredients are dissolved.
Let come to a boil and stir until the consistancy becomes thickened.
Remove from heat and serve.
