Italian Meatloaf

A classic recipe, with a delicious twist!

For me, meatloaf is comfort food.  Mom used to make it on cold winter days while we were growing up.  I’ve had really bad meatloaf, and I’ve had really good meatloaf: this is good meatloaf.

This recipe is so unique and it is delicious.  It sounds complicated but it is really not too hard.  This recipe comes from one of my mom’s friends.  She shared it with me, and I’m sharing it with you!  I added some pesto to it, because pesto just makes everything better!!

Prep time: 30 minutes Cook time: 1 1/2 hours


  • 1 lb lean ground beef
  • 1 egg
  • 1/2 cup panko bread crumbs
  • 2 tbsp milk
  • 1/2 tsp salt & pepper
  • 1 tsp oregano
  • 6 slices mozzarella cheese
  • 6 thin slices of ham
  • 1/4 cup fresh pesto
  • 1/2 cup tomato sauce


Mix all the ingredients listed under meatloaf in a bowl together.  Lay out a piece of parchment paper or wax paper on your work space.  Place the meat in the center of the paper and form into a rectangle, being careful not to have any holes.

Leaving about an inch all the way around layer the ham, and mozzarella on the meat.  Spread the pesto on top of the cheese slices.  Using the paper, roll into a log and seal the ends and seam to keep all the filling intact.  Remove the paper and place in a loaf pan, seam side down.  Pour the sauce over the top of the meatloaf.

Bake at 350° for 1 1/2 hours or until done.
