Lemon bread is one of those recipes that remind me of the holidays. The zesty lemon flavor permeates the whole loaf and the lemon glaze on the top makes it even more irresistible.
During the holiday season my mom would bake tiny loaves of bread and give them out as gifts. I remember liking to help with the glaze that you spread on the top of it right as it comes out of the oven. I always volunteered to lick out the bowl.
- 1 stick butter
- 1 1/2 cup flour
- 1 tsp salt
- 1 cup sugar
- 2 eggs
- 1 tsp baking powder
- Peel of half of a lemon
Preheat oven to 350°
Grease loaf pan. Combine the butter sugar and eggs until fluffy.
Add the rest of the ingredients and mix. The dough will be thick.
Bake for 50 - 60 minutes or until a toothpick comes out clean.
When it comes out of the oven remove from pan and pierce the top of the loaf with a fork.
Combine: Juice of a lemon and 1/2 cup of sugar. Using a pastry brush, brush the top and sides of the bread with the mixture.
Makes one regular loaf.
