Mile High Pancakes

Sunday nights after church we were always hungry and it became our tradition to cook up a batch of delicious pancakes or some eggs and bacon. My mom and dad were always inviting company over last minute, so it was usually a big meal. One night as we were preparing to make our pancakes we realized there was no pancake mix left. We lived in rural upstate New York so going to the store was at least a twenty minute drive, if the stores were even open.

We had some family friends over to our house, Glenn Brenzel and his wife who served as the elder of our church and my high school math teacher. He ended up making from memory and from scratch the best pancakes that we had ever tasted. It is not often that you taste a home made pancake, but this recipe is worth the time and effort, and they are very filling.

  1. This is my dad’s recipe. It was a tradition for him to make them every Saturday morning. My brother, sister and I would get up on a Sat. and watch cartoons ’till our stomachs rumbled and then very quietly go to our parents bedroom, open the door, and whisper, “We’re hungry!”
