I am sure many of you have tasted or made these cookies before. These very cookies were one of the first recipes that I learned to make myself as a little girl. We had a cook book that had simple directions to follow and this one was one of my favorites to make.
I added some new things this time I tried them. I held back on some of the sugar. I took out a whole 1/2 cup of sugar. I also added some coconut. I love coconut and thought it would be a nice texture. I also used an all natural peanut butter. You know the kind that separates when left alone. All natural peanut butter is on many labels but if you turn it around and it has anything in it other than peanuts, and oil, then its probably not all natural. Peanut butter is quite simple to make and I even have a recipe for it here! enough about peanut butter…now onto the cookies!!
Prep time: 10-15 minutes
- 1/2 cup butter
- 1 1/2cup white sugar
- 1/2 cup milk
- 1/4 cup unsweetened cocoa powder
- 1 tsp vanilla
- 1/2 cup all natural peanut butter
- 2 1/2 cups quick oats or whole oats (I like to use half whole oats half quick cooking)
- 1/2 cup shredded coconut
Melt butter in a medium sauce pan. Once melted add the cocoa, milk, and sugar. Stir until smooth and dissolved. Take off the heat and stir in the peanut butter and the vanilla.
In a seperate bowl combine the oats and coconut. Pour chocolate mixture over the oats and mix until combined.
line a tray with wax paper, or parchment paper and spoon onto the trays. Allow to stand until firm. A few hours. Or eat them with a spoon while they are warm, which is what I like to do! Either way, they are delicious.
Store in an air tight container.
