This is one of my favorite cookie recipes. Chocolate and peanut butter in the same recipe can never go wrong. A dear friend at my church makes these all of the time and claims that they are so easy. I had to try it for myself, and yes they are very easy and very tasty. It is getting to be that time of year when cookies are being baked left and right. This is a great recipe to add to your plate of cookies this year.
You can use whichever peanut butter cookie recipe that you prefer. The one that I used is from an Amish cookbook called Cooking with Elsa
- 1 cup brown sugar
- 1 cup white sugar
- 1 cup shortening
- 2 eggs
- 3 cups flour
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla
- 1 cup peanut butter
- 1 bag of Reeses peanut butter cups (the mini ones)
Preheat oven to 350°
Cream together the sugars and butter. Add the eggs and blend well.
Add the rest of ingredients except the peanut butter. When mixed together add the peanut butter and blend.
In a well greased mini-muffin tin drop balls of dough. Bake about 8-10 minutes.
Take out of oven and immediately place one unwrapped reeses candy in the center of each cookie.
Allow to cool completely in the muffin tin. Eat and enjoy!!
Makes about 48 cookies
