Healthy, tasty, & quick. This recipe for chicken is great on the grill, baked in the oven, or if your a college student with limited kitchen access, a George Forman can do the trick as well. You will be surprised at how a few simple ingredients will make your chicken nice and tasty.
- 2 lbs boneless skinless chicken breasts
- 2 tbsp cracked peppercorns (multicolored tastes the best)
- 2 cloves garlic minced or 1 tsp garlic powder
- 1 tsp salt
- 1 tbsp fresh rosemary, minced (dried works as well, just use a little less)
Combine the peppercorns, garlic, salt and rosemary in a bowl with a tbsp of olive oil. Make a paste and rub evenly on both sides of the chicken breasts.
Let chicken marinate for 30 minutes.
Cook until no longer pink and juices run clear. A nice low heat on the grill keeps the chicken tender and juicy.
