These small cookies are a great holiday treat and so easy to make. Christmas time is the best time for baking and eating festive cookies. When I was young we would bake cookies all throughout the holiday season. My dad was our taste tester, but we would often have to hide them in the freezer or under our beds in boxes so he didn’t “test” all of them. He would always tease us and say he was just making sure that none of them were bad. We had our list of what cookies we were going to make and who we would give them to and these were always on the list. They are rightly named too, because they are perfect with a cup of tea or coffee to dunk them into. Enjoy!
- 1 cup butter or stick margarine softened
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 2 1/4 cups all purpose flour
- 3/4 cups finely chopped nuts
- 1/4 tsp salt (I omit this)
- Powdered sugar
Preheat oven to 400°
Mix the butter, 1/2 cup powdered sugar, and the vanilla in a large bowl. Stir in the flour, nuts and salt until dough holds together. It will be very stiff.
Shape the dough into 1-inch balls. Place about 1-inch apart on and ungreased cookie sheet.
Bake for 8-10 minutes or until set but not brown. Remove from the pan and let cool for 5 minutes.
Roll in powdered sugar. Let cool 5 more minutes and roll in sugar again.
