Strawberry shortcake is not something that you find to often around this time of year. For our Christmas meal this year my brother was in charge of picking the dessert of choice. He chose strawberry shortcake and so that is what we made. The recipe for shortbread is my grandmothers and she got the recipe from her grandmother, so this has been in the family for a while. We then topped it off with some homemade whipped cream. Even though it was Christmas time we all enjoyed the fresh sweet flavor of this dessert.
- 4-5 cups strawberries
- 2 cups all purpose flour
- 3 tsp baking powder
- 1/4 - 1/2 cup sugar (depending on how sweet you like it)
- 1 cup milk
- 1 egg
- 1/3 cup butter
Preheat oven to 400°
Cream together the flour and butter. In a separate bowl mix dry ingredients together and then add the wet ingredients. Hand mix just until moistened.
Bake in 8x8 buttered dish for 15 minutes or until golden brown.
Once the shortbread is in the oven wash, hull and slice your strawberries and combine with sugar. Refrigerate until ready to serve.
To make your own whipped cream combine 1 cup heavy cream with 1/4 cup sugar and beat with wire whisk on medium speed until soft peaks form. Be careful not to over mix or you will have butter. For the best result mix in a chilled metal bowl. Refrigerate until ready to serve on top of your strawberry shortcake.
