Over Christmas this year, my mom and I served up a nice spread of all sorts of Hors d’œuvre. We made some bacon wrapped scallops, stuffed mushrooms, smoked grilled shrimp, and some bacon wrapped onions. It was a tasty feast! The recipe we used to make these mushrooms was one of our own. There are so many out there and we just added some of this and that and the result was very tasty!! So if you are looking for some new ideas to serve to some dinner guests you may want to give this one a try. It was a crowd pleaser.
- 1 1/2 cups crab meat
- 1/2 cup bread crumbs
- 1/2 stick melted butter
- 1-2 tbsp Parmesan cheese
- 1/2 tbsp cinnamon chipotle rub (or whichever spices you prefer)
- 6-8 medium sized mushrooms
Wash and de-stem the mushrooms. There needs to be a big enough well in the mushrooms to stuff them.
Take the crab meat and chop it in a food processor. Mix it together with the bread crumbs, melted butter, Parmesan cheese and the spices.
Mix it until well blended. The mixture should clump together enough for you to stuff the mushrooms.
Once the mushrooms have been stuffed you can either broil them until golden brown, or smoke them on a grill until done. The grill method gives them a little smoky flavor to them.
Makes stuffing for 6-8 medium sized mushrooms.
